I make a sincere effort to do some form of exercise every day, except for Sunday. That's church and hang out day.

I don't work Sunday any more... The Sabbath is a very reasonable idea. Otherwise, you work yourself to death.

I'm working harder than ever now, and I'm putting on my pants the same as I always have. I just get up every day and try to do a little better than the day before, and that is to run a great restaurant with great food, great wine, and great service. That's my philosophy.

A lifestyle is what you pay for; a life is what pays you.

Weekends are a real luxury for me because I'm usually working.
