The industrial food system is so cruel and so horrific in its treatment of animals. It never asks the question: 'Should a pig be allowed to express its pig-ness?'

That's the joke about confinement pigs: they taste like whatever sauce you cook them with.

The pig is not just pork chops and bacon and ham to us. The pig is a co-laborer in this great land-healing ministry.

Our culture doesn't ask about preserving the essence of pig; it just asks how can we grow them faster, fatter, bigger, and cheaper. We know that's not a noble goal.

People have become so much more obsessed with the stories behind their food. When we go the market to buy bacon, we want to know where that pig came from and what processes were involved in getting it to us.

Anything that got to do with a pig, I ain't eatin'.

The Pork Marketing Board worked with advertising and marketing firms to position the pig as a sort of four-legged chicken - a healthy part of any low-fat lifestyle. The Other White Meat campaign launched in 1987 and was so successful at selling lean pork cuts, it actually hurt the rest of the pig.

We domesticated pigs to turn food waste back into food. And yet, in Europe, that practice has become illegal since 2001 as a result of the foot-and-mouth outbreak. It's unscientific. It's unnecessary. If you cook food for pigs, just as if you cook food for humans, it is rendered safe. It's also a massive saving of resources.

I try not to eat processed foods, well, ever. If it comes from a lab or a factory, I don't want it.

I hate pork rinds. I couldn't imagine how anybody would ever get the idea of taking skin from a pig and frying it and then trying to sell it to people. And then people actually buy it to eat it. That is the true sign of the decline of the human race.
