There are a lot of great things about food, but it's something that's an eternal struggle in our contemporary society, where and how food is made, where it's coming from, how much to consume. There are so many layers to it.

In America, we are engaged in constant battle with food.

Food is ever-changing and ever moving forward and getting more and more complex.

Food trends have been around as long as people have had the ability to choose between different things to eat, but the modern, interconnected media has made food trends a viral phenomenon. Once upon a time, it was just a few newspapers and a few select gourmet magazines that were writing about food. Today, it's every single publication.

A safe, affordable and plentiful supply of food is a national security issue.

Food is not just what we put in our mouths to fill up; it is culture and identity. Reason plays some role in our decisions about food, but it's rarely driving the car.

What worries me is that, because of the amount of media coverage of food, Britain seems to have become a foodie nation - but I'm not sure it actually has. I'm not sure there's been a huge change in the pantry at home or what we cook for supper.

Food as a hobby used to be an elite pastime, and it has become something that is totally ordinary for people of every background. In that way, we see the growing up of the American food scene: that it's okay to be a regular person and be really into food.

To address our current food system problems, I propose a series of local, regional, national and global conversations - starting around the dinner table - to rethink the food we produce, buy and eat.
