The food we eat goes beyond its macronutrients of carbohydrates, fat and protein. It's information. It interacts with and instructs our genome with every mouthful, changing genetic expression.

Genetically modified foods are good.

Realizing the ways in which we humans may have been inadvertently changing our genes for millennia provides a way for us to begin to think about the inevitable genetic revolution in medicine that is going to allow us to advertently change our genes over centuries and even decades.

If food is labeled, some people might choose to eat stuff that's genetically modified. They might decide they love it. But give us a choice.

Not only do we have to change the food we eat... we have to educate people about what they can eat appropriately.

I was brought up to think a lot about food and have respect for it, both as medicine and something to eat and enjoy.

We can create new food substances.

Unlike curing cancer or heart disease, we already know how to beat hunger: food.

We know that genes shape human cultures and human societies: The DNA we inherited from our ancestors makes certain foods taste better, affects the way we care for children, influences what colors we find vibrant, and contributes to our love of socializing, among other examples.
