I travel the world, and I can see in Toronto the cooking is very personal. These people cook with their hearts.

Cooking is all about people. Food is maybe the only universal thing that really has the power to bring everyone together. No matter what culture, everywhere around the world, people get together to eat.

Of course I love cooking Eastern European food because I'm a Jew, but I also love making roast chicken. I love making Hungarian goulash. There are a lot of egg noodles in my cooking.

I am the most unselfish chef in Britain today.

The type of cuisine I do, especially after being on 'Iron Chef' for several years, is a lot of global cuisine. My strength has always been Mediterranean cuisine across the board from Morocco, Spain, Italy, Greece, France, but I think now I'm doing a lot of very different cuisines all the time.

I used to have a monthly cookery column, and am a big cook, so that whole sense of connecting what one does with food to one's cultural identity has always been fascinating to me.

What worries me is that, because of the amount of media coverage of food, Britain seems to have become a foodie nation - but I'm not sure it actually has. I'm not sure there's been a huge change in the pantry at home or what we cook for supper.

American cooking is one of the unknown cuisines in America.

I cook everything. I love Mediterranean cooking, I love Asian cooking. I do lots of Japanese noodles.
